Cut that forms the ventral wall of the abdomen together with the belly flap. It is rectangular in shape with rounded ends, flat, thin and devoid of fat, with a moderately firm consistency. It has a very mild flavour and is dark red in colour. Although it is quite ductile, it is perfect on the grill.
