Triangular cut that is bordered forward by the shoulder and belly flap, and downwards and backwards by the pink post. It is a meat of moderate consistency and excellent flavour. A muscular cut with a cone shape, partially covered in fat, which gives it a very particular buttery flavour and aroma.
